    About Me

    Hey there! My name is Emilee and I run things over here at Cate & Co. Kitchen. I’m the wife to my handsome hubby, Chris, and mama to our two little boys, six and two years old. My husband is a firefighter which adds another level of crazy to our lives and schedules.  But thankfully, it also provides a place for all these baked goodies to go to!

    I grew up very much in the health and fitness world. My mom was an aerobics instructor {think leg warmers and leotards} and worked in fitness centers throughout my childhood.  I was raised with all of the 90's health fads - which now makes me cringe - but also set the tone for making health and fitness a priority in my life!

    Mine and my husband’s paleo journey began about 4 years ago while trying to get pregnant with our second child. We had been trying {unsuccessfully} to conceive for over a year when we sought help from my OBGYN and naturopathic doctor. During this time I was diagnosed with hashimoto’s disease. It was then that we decided to move towards a gluten-free, dairy free lifestyle. This very organically turned into a paleo lifestyle. Prior to this, we were absolutely health conscious, however, we didn’t know what we didn’t know!

    In October of 2015 I completed my first round of Whole 30 and I was hooked! I felt great and loved the positive impacts it was having on my body. In March of 2016 I was diagnosed with endometriosis and given a very small chance of getting pregnant (again) on my own. When we began fertility treatments that month I knew if we were going to be spending that amount of money, I needed to do everything in my power to reduce the inflammation in my body and increase our chances of success. This lead to cleaning house, quite literally, of all things that went ON and around my body, just as I had done with things that went IN my body.

    After three failed rounds of treatments and a miscarriage, we were given little hope that we would be able to expand our family. However, we left it in God’s hands and continued our new lifestyle. Over the next two months I had completed my third Whole 30, and by November of 2016 I was pregnant naturally!  Since then I have completed 4 more rounds.

    In 2019, I opened a cottage bakery specializing in paleo goods and macarons.  You can find out more about that here! I now enjoy finding ways to continuously improve my family's health naturally and in the most non-toxic environment possible.  Of course, with the occasional frozen yogurt and sushi date thrown in because….duh!
