    Instant Pot Shredded Chicken

    This Healthy Instant Pot Chicken is incredibly easy and so juicy and delicious! This is the perfect dish to meal prep for the week and to serve atop salads or in tacos, soups, or casseroles!

    Why You’ll Love This Recipe

    • Zero prep time! - There is no prep needed for this recipe! Simply add all ingredients to the instant pot and it does the rest! Instructions are even included for frozen chicken if you forget to thaw some.     Ingredients Needed

    Ingredient Notes

    • Chicken Breast - I typically make this recipe with boneless skinless chicken breast, however, boneless, skinless thighs would work as well. You can also do a combination of the two!
    • Chicken Bone Broth - Bone broth is my go to for the added benefits, but you can also use chicken broth/stock or even water in a pinch. Using broth definitely adds more flavor to the chicken.
    • Spices - Your favorite all purpose or poultry seasonings will be great for this recipe! I love using Trader Joe’s 21 Seasoning Salute or Noble Made Citrus and Herb.
    • Salt - if using water instead of broth, increase the salt in this recipe.

    How To Make This Recipe

    • Add the chicken to the bottom of the instant pot and then sprinkle with the seasonings.

    • Top the chicken with the bone broth.
    • Secure the instant pot lid and set the valve to “seal”. Set to pressure cook for 12 minutes. When the 12 minutes is up allow the pressure to naturally release for 5 minutes before manually releasing the pressure by turning the pressure valve to release.

    • Ensure the chicken has reached 165F and either drain the liquid from the pot or remove the chicken and place in a separate bowl.
    • Shred the chicken using two forks or by using a handheld mixer and enjoy!

    Shredded Chicken Variations

    There are so many difference ways to serve and enjoy this shredded chicken. You can change it up by the seasonings you use or the sauces you serve the chicken with. Here are some delicious options;

    • Chicken Salad - One of my favorite ways to enjoy instant pot chicken in by making this Whole30 Chicken Salad.
    • Chicken Tacos - Add chili powder, cumin, and paprika to the chicken before cooking and squeeze with lime juice afterwards for a delicious shredded chicken for tacos!
    • Buffalo Chicken - Adding some ghee and buffalo sauce makes a great Whole30 and Paleo dish. Try this Shredded Buffalo Chicken served with these Baked Sweet Potatoes.
    • Shredded BBQ Chicken - After cooking and shredding the chicken serve it up with your favorite BBQ sauce. This goes great with Whole30 Coleslaw and Broccoli and Bacon Salad.
    • Chicken Casseroles - Casseroles is another great way to use shredded chicken. Try this Chicken Fajita Casserole!
    • Chicken Soups - Adding this shredded chicken to some sautéed veggies and broth makes a great chicken soup! Or try this Dairy Free + Gluten Free Creamy Chicken Tortilla Soup.

    Can I make this recipe with frozen chicken?

    Yes! To make this shredded chicken with frozen chicken simply increase the cooking time by 2 minutes. As always, be sure to check that the internal temp of the chicken has reached 165F.

    What’s the best way to store this chicken?

    This recipe is best stored in an airtight container in the fridge for up to 4 days.

    Can you freeze shredded chicken?

    Yes! Allow the chicken to cool completely and then place in an airtight container for up to 3 to 4 months.
