    Paleo Double Chocolate Chip Banana Bread

    This Paleo Double Chocolate Chip Banana Bread is so fudgy and delicious. Rich chocolate banana flavor and naturally sweetened only with banana and dairy free, paleo compliant chocolate chips. Perfect for a paleo baked good breakfast, snack, or dessert!

    You can never go wrong with anything that’s double chocolate chip! Am I right?!

    This Paleo Double Chocolate Chip Banana Bread, believe it or not, was a total accident recipe. My son has been asking daily during quarantine to bake something “all by myself.” Most days I cringe at this request because I know it means a whole lotta mess for me to clean up and a whole lotta wasted ingredients.

    BUT on this specific afternoon, I gave in and let him suit up! I got out some staples and he started throwing things together. Long story short, this magical loaf came out of the oven and i was scrambling to remember how much of what was thrown in.

    We remade it later that week and then remade it again a couple weeks later. Delicious every time!

    Rich enough for dessert but healthy enough for breakfast and did I mention it takes only minutes to whip up and get in the oven?? This will quickly become a family banana bread favorite!

    Paleo Banana Bread Ingredients

    Bananas - Super ripe!

    Eggs

    Almond Butter

    Vanilla

    Almond Flour

    Tapioca Flour

    Cacao Powder

    Cinnamon

    Baking Soda

    Chocolate Chips - to keep this bread paleo, make sure you’re using a paleo friendly brand such as enjoy life!

    Cacao Powder Benefits

     

    You can of course use cocoa powder in place of cacao, however, I like to use cacao whenever and wherever I can for the many health benefits.

    How to make this recipe

    This recipe is so easy! You’ll have it in the oven in ten minutes!

    Mash the banana and then add the rest of the wet ingredients.

    Mix in the dry ingredients.

    Stir in the chocolate chips.

    Pour the batter into a prepared loaf pan and bake at 350 for 30-35 minutes until bread is set in the middle and a knife inserted comes out with moist crumbs.

    Cool for 10 minutes before removing.

    How to store banana bread

     

    Store on the countertop or in the refrigerator in an airtight container - if it lasts that long!

    Ingredients
      

    • 2 Very Ripe Bananas Mashed (approx 1 cup)
    • 3 Eggs
    • 3 Tbsp Almond Butter
    • ½ tbsp Vanilla
    • 1 ½ c Almond Flour
    • ¼ c Tapioca Flour
    • ½ c Cacao Powder
    • ½ Tbsp Cinnamon
    • 1 tsp Baking Soda
    • ¾ c Enjoy Life Chocolate Chips
    • 1 Tbsp Maple Syrup only if bananas are not very ripe

    Instructions
     

    • In a medium sized bowl, mash bananas and mix in remaining wet ingredients.
    • Mix in dry ingredients.
    • Stir in chocolate chips.
    • Pour batter into loaf pan (greased or lined with parchment paper). *Batter will be fairly thick.
    • Top with 1-2 Tbsp chocolate chips, if desired
    • Bake for 30-35 at 350, until a knife inserted comes out with moist crumbs.
    • Allow to cool 5-10 minutes until removing from pan.
    • Enjoy!

      Can I substitute almond flour for other flour like sunflower seed flour?

        Hi Lily! Unfortunately I have never tested it out so I can't guarantee the results, but I do know in general you can typically substitute sunflower seed flour for almond flour 1:1. If you try it out I would love to hear how it turns out! - Emilee
